Aperol Spritz

With the sun shining and the tunes on, Australia Day calls for a simple, refreshing and delicious cocktail!

Ingredients:

  • Aperol

  • Prosecco

  • Soda Water

  • Ice

  • Orange

Method:

  • Fill a large wine glass- about 420ml with ice

  • Combine equal parts Italian Prosecco & Aperol (60 mL each)

  • Add a splash of soda water

  • Finish with a wedge of orange to garnish

Coronarita

Or like the guys at The Criterion Hotel call it a Lagerita, because no beer is off limits lets be honest.

Definitely one for the adventurous, would you give it a go?

Ingredients:

  • 45ml Tequila

  • 15ml Triple Sec

  • 1 Corona

  • 30ml lime juice

  • Salt and lime wedge to garnish

Method:

  • Rim edge of glass with lime juice and coarse salt. Add ice.

  • Pour over tequila, triple sec and lime juice. Stir well to mix.

  • Add an upside down corona and garnish with a lime wedge.

Ink & Tonic

A small twist on a classic, gin that turns a different colour when you add tonic!

Ingredients:

  • 30ml ink gin

  • 120ml premium tonic

  • Ice

  • Seasonal garnish- try citrus (grapefruit, orange, lime), herbs (thyme, mint or rosemary) or fresh strawberries.

Method:

  • Pour gin and tonic over ice. Garnish and serve.

Rosé Punch

Sharing is caring, and what better way to celebrate the long weekend than catching up with a group of friends over a pitcher of rosé punch!

Ingredients:

  • 1 bottle of rosé

  • 1/3 cup vodka

  • 3 cans sparkling blackberry flavour water

  • Juice of 1 lime

  • 2 tbsp honey

  • 1 lime, sliced

  • ½ cup blackberries

  • ¼ cup raspberries

  • ¼ cup sliced stawberries

Method:

  • Combine all ingredients in a larger pitcher and stir to combine.

  • Serve over ice and garnish with extra berries

Shandy Cider

Beer and cider- a combination we didn’t know we needed in our lives until now.

Ingredients:

  • 2 x 345ml btl pale ale, or other beer

  • 330ml sparkling apple juice, or non-alcoholic cider

  • 2 cups lemonade

  • 1 small lemon, thinly sliced

  • 1 small red apple, thinly sliced

Method:

  • Combine the ale, juice or cider and lemonade in a large jug. Add lemon and apple slices. Gently stir to combine. Divide among glasses.
